Chicken Soup

You will need a whole chicken, salt, celery, onion, garlic, carrots, egg noodles, WATER (yeah, you know where you can find that..ha ha), poultry seasoning.

11 quart or larger stockpot, colander.

This is really just about what you think you will like. I don't think you can go wrong honestly.

Put your chicken after rinsing it into stockpot. Add 1 1/2 gallons of water. Add 2 tablespoons salt.


Add 2 tablespoons minced garlic, or however much you want. I used minced garlic out of a jar..so much simpler.


Coarsely chop some celery with tops and place in pot. You also could add some onion if you like.





Bring to a boil, then place a cover and turn to low and simmer for 4 hours until chicken is falling apart.

In the meantime, chop up carrots.


Chop up celery.

Chop up onion and mix together set aside. Remember, use however much you want. I used a bag of baby carrots, one onion and about 3-4 stalks of celery.


After chicken has cooked for 4 hours, place colander above another large stockpot or place in the center of a VERY LARGE bowl. Dump pot over colander to separate chicken and stock.




Add veggies to stock, bring to a boil and then let simmer for an hour or until veggies are tender. I also added a little bit of poultry seasoning.

Separate chicken from bones and add to pot after veggies are done cooking.


Also add a bag of egg noodles. I guess if you wanted to cook these on the side and add them as people liked that would be a good idea. You could even make rice instead.


Enjoy. This was a huge fall hit with my family.


We ate our fill which was a lot and still had all this. Will be good to put some in freezer and also to eat throughout the coming week. It is quite satisfying to feed my family good things.
