Black Beans and Tortilla Chips

So, obviously I am catching up tonight on posts that I have been meaning to put up. We had a meatless meal the other night. I am hoping to incorporate beans into our dinners to save some money and still offer some protein.



Black Beans and Tortilla Chips

Put 3 cups of black beans in 10 cups of water add 1 tablespoon salt. Boil and then let simmer for 3 hours. You may need to keep adding water or else they will stick and burn.

After 3 hours, serve up black beans with a bit of the bean broth and then add cheese, sour cream, and salsa. Serve with tortilla chips. It was another hit at my house...except for my 8 year old who put up with it only for so long. He was a good sport though and ate most of it.
