Some Pics Of My Littlest Guy


Starting to grab his feet. He is not really interested in rolling over just yet.



He is really starting to like various toys with their different sizes and colors.


Finally starting to enjoy being on his stomach. My poor little guy has had reflux which has limited his activity for the past 6 months.




He is looking pretty confident in himself.

He is coming up quick on 6 months. Exciting but sad how quickly it really flies by.

40 Days Of Prayer For Our Husbands

This is a group on facebook and since some of you don't have accounts on facebook and might not even want one, I decided to post it here.

I Tried To Climb The Mountain Today....

This was read today at Weight Watchers, I have multiple areas in my life that I can apply this to, not just weight loss...how bout you...what areas of your life are your mountains that need to be climbed.

I TRIED TO CLIMB THE MOUNTAIN TODAY.

I tried to climb the mountain today. As I inched my way up the path, I felt overwhelmed, so I had to turn back.

I tried to climb the mountain today. On my journey, darkness started to fall, and I was full of fear, so I had to return to a safe place.

I was ready to climb the mountain today. But it was so hot outside, I thought I better stay in my nice air-conditioned house and rest up for tomorrow's attempt.

I was about to climb the mountain today. But I had so many other things to do, so instead of climbing the mountain I took care of much more important tasks. I washed my car, mowed the grass and watched the big game. Today the mountain will just have to wait.

I was going to climb the mountain today. But as I stared at the mountain in it's majestic beauty, I knew I stood no chance of making it to the top, so I figured why even bother trying.

I have forgotten about climbing the mountain today; until a friend came by and asked me what I was up to lately. I told him I was thinking about climbing that mountain some day. I went on and on about how I was going to accomplish this task.

Finally, he said, "I just got back from climbing the mountain. For the longest time I told myself I was trying to climb the mountain but never made any progress. I almost let the dream of making it to the top die. I came up with every excuse of why I could not make it up the mountain, but never once did I give myself a reason why I could. One day as I stared at the mountain and pondered, I realized that if I didn't make an attempt at this dream all my dreams will eventually die."

"The next morning, I started my climb." He continued, "It was not easy, and at times I wanted to quit. But no matter what I faced, I placed one foot in front of the other, keeping a steady pace. When the wind tried to blow me over the edge, I kept walking. When the voices inside my head screamed "stop!" I focused on my goal never letting it out of sight, and I kept moving forward. At times, I was ready to quit, but I knew I had come too far. Time and time again, I reassured myself that I was going to finish this journey. Some of my mountains are:

1. Getting to church on Sunday even with a sometimes difficult baby, bad weather or no dress clothes to wear.
2. Weight loss.
3. Organization.
4. Exercise.

I am sure the list could go on and on, but these are the ones that I sense on my plate right now.

King Ranch Chicken Casserole

So this turned out to be VERY good. This was this weeks Monday recipe and is definitely a keeper and very WW friendly. I got it off of Half My Size

King Ranch Chicken Casserole

Serves - 6
Points - 4

1 10 oz. can chicken breast, drained
1 can 98% fat free cream of mushroom soup
1 can 98% fat free cream of chicken soup
1 can Rotel tomatoes
8 corn tortillas, cut into fourths
1 cup fat free shredded cheddar
1 small onion, chopped
4 cloves garlic, minced
1/2 cup celery, chopped
salt and pepper to taste

Methods/steps
Saute onion, garlic and celery in a nonstick skillet coated with cooking spray until tender. Add soups, Rotel tomatoes and chicken; heat and mix thoroughly. Add salt and pepper to taste.

Spray 9x13 baking dish with cooking spray. Layer 1/2 of tortillas in bottom of dish. Pour 1/2 of soup mixture over tortillas. Sprinkle 1/2 of shredded cheese over soup mixture. Repeat layers ending with cheese. Cover with foil.

Bake at 350 degrees for 40 minutes. Uncover and cook additional 10 minutes. Let stand for 5 minutes before serving.

205 cal., 2.4 g. fat, 2.5 g. fiber

Peanut Butter and Hot Fudge Pudding Cake

I don't remember where I got this recipe from, but I am going to try it today..for the kids of course as I am on Weight Watchers.

1/2 cup flour
1/4 cup sugar
3/4 tsp baking powder
1/3 cup milk
1 TBSP oil
1/2 tsp vanilla
1/4 cup peanut butter
1/2 cup sugar
2 TBSP cocoa
1 cup boiling water

Combine flour, 1/4 cup sugar and baking powder. Add milk, oil and vanilla. mix until smooth. Stir in peanut butter. Pour into slow cooker. (Spray with Pam first)

Mix together 1/2 cup sugar and cocoa powder. Gradually stir in boiling water. Pour mixture over the batter in slow cooker. Do not stir.

Cover and cook on high about 1 1/2 to 2 hours or until a toothpick inserted comes out clean. the cake will be on top of a nice fudge sauce.

Let cool slightly and serve over ice cream.

SOUNDS GOOD DOESN'T IT???

Perfect Peace

Do you ever just have that overwhelming feeling of God's love for you. This morning as I was standing in the kitchen making a german pancake for my son...I felt complete and utter peace. Even if I look like a truck ran over me and I am overweight and my husband is gone for 2 more months and the house is a mess....I felt peace and I felt loved. Even if losing my job was a big adjustment...I am adjusting well...am even thankful for the opportunity that God has now given me to serve my home. I am thankful for my warm cup of coffee, for new recipes, for my pink robe that really should be given to the cat for a new bed as that is how bad it looks, thankful for my two sons that spend every day with me, thankful for my laptop that is becoming my home base for everything important to run my job as domestic engineer, for the sun shining in every window even though is so bitter cold, for yo yo ma making this experience just the more peaceful.

I love when God allows me these moments to just completely "get it". I have to say, sadly, they are few and far between...but I guess I would not savor them as much if I had them more frequently....I would not notice his voice as loudly if they happened more often. I hope you too know what I am talking about.....I am so happy to be a child of God.....

Menu Plan Monday

My first Menu Plan ever and I hope that I keep the habit up. I get very frustrated when I question everyday...okay...what do I do for dinner. It took some time and looking around especially since I am doing Weight Watchers, but here is what I came up with....

Monday: King Ranch Chicken Casserole, Salad

Tuesday: Pasta E Fagioli, Peasant Bread, Salad

Wednesday: Cottage Cheese Roast, (Have not figured out what to have with it (any suggestions), Veggie

Thursday: Unstuffed Cabbage Rolls, left over Peasant bread

Friday: Roast Sticky Chicken, Redskin potatoes, Veggie

Saturday: FFYS (fend for yourself), something easy...English Muffin pizzas, or hot dogs...something or another.....let Mom relax.

Sunday: Left overs.

Some of our breakfasts for this week will include: German Pancake, Cinnamon Scones, Stuffin Egg Muffins, as well as the old stand by of cereal or poptarts or some pumpkin waffles from the freezer.

CVS Trip




Just about every possible battery operated thing in my son's crib was going dead so I decided to see what was on sale and where. I am glad I did, because I got some great deals at CVS tonight.

6 boxes of Puffs for 5.94 total, used two $1 off three coupons for a total of $3.94 or $0.66 per box. Regularly $2.19 a box.

4 bottles of Dawn, B1G1, 1.99 for two, had two $1 off coupons, total came to $1.98 or $0.50 a bottle. Regularly $1.99 a piece

4 packs of Duracell batteries at 2.99 a piece, had four $1 coupons, total came to $7.96 or $1.99 a pack. Regularly $5.29 a piece.

10 candy bars, had five $1 off 2 (they were on sale for 2/$1)...GOT THEM ALL FREE!!!! Normally priced $0.89 a piece.

Total came to $13.88 without tax. I had $6.50 ExtraCare Bucks.

GRAND TOTAL: $7.38

If I would have bought it all full price it would have been: $51.16

TOTAL SAVINGS of $43.78

I only lost 0.4 lbs this week. It is better than gaining though that is for sure. I think that my diet consisting of a few more carbs than normal accounted for the small loss...need to be more balanced this week with my intake of carbs and protein. Total lost is 12.6 pounds

Best Ever Chili

1 lb of lean ground beef (I use 96/4)
1 can Kidney Beans
1 can Pinto Beans
1 can corn
1- 4 ounce can chopped green chilis
1 can fat free refried beans
1 15 ounce can chopped (diced) tomatoes
1 16 ounce can (or 2 - 8 ounce cans) of tomato sauce
1 large onion
1 cup water
1 package taco seasoning
1 package Hidden Valley Ranch DRESSING mix (NOT buttermilk one)

Chop onion and brown with ground beef. Add the rest of the ingredients (DO NOT drain anything.) Bring to a boil over medium heat and then simmer for 15 minutes.

I have found a couple sites that say this is 1 cup = 1 point but when I put it in the recipe builder...it was 2 points...so not completely sure.

[Son] (playing Mariokart and explaining what he did wrong) I fell and all the people passed me.

[Daughter] What? You smell?

[Son] No, all the people passed me because your big butt was distracting me.....

It was just so funny the way he said it...and I am in the other room overhearing it.

Oh the love between brother and sister.

Today the jedi (son) was trying to count by 2's and was not doing so hot and I said that he has forgotten everything....to which he said...well you know Mom that summertime makes kids stupid! That's why..

Good logic...teehee.....funny, funny.

Inauguration Day

Today is definitely a day in history. My children are seeing the first black president take office today. The D-Academy will be studying previous inauguration days in history, what normally happens on inauguration day, making a flip book on what it would be like to live in the White House and watching the new president give his inauguration address. Hoping to also get into previous addresses from Abraham Lincoln, Thomas Jefferson, etc. We have a map of the inaugural parade that we will be looking over as well. I am sure that my son will be excited to just take a break from normal school to have a different kind of day. I would like him to put himself in the new president's daughter's shoes and see what that might feel like. His daughter is only a year younger than my son. Should be an interesting day!

Delicious Low Fat Banana Bread With Chocolate Chips


1 3/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
3 bananas, mashed
1 tablespoon butter, melted
3 tablespoons applesauce
2/3 cup brown sugar substitute (splenda blend)
2 eggs (could even do better with 1/2 cup egg substitute)
1/2 cup chocolate chips (I used mini chips)

Preheat the oven to 350 degrees.
Spray a loaf pan with Pam.
Mix the dry ingredients & Set aside.
In a separate larger bowl, mix the bananas, butter, applesauce, and brown sugar substitute.
Stir in eggs, mix.
Add the flour, mix thoroughly.
Stir in the chocolate chips.
Pour into loaf pan, and bake 50 minutes.
Cool to 10 minutes before removing from pan.

Sliced into 12 slices, this is only 4 WEIGHT WATCHERS POINTS.

This was VERY GOOD bread. The kids thought this was the best recipe yet. I like to make banana bread when I have ripe bananas, which is most of the time cause we buy em and no one eats em.

Some Things I Have Realized....From Being Around My Kids....

-Legos are dangerous.

-A 409 bottle can be cheap entertainment for a 5 month old.

-Action figures are better without hands or heads.

-The best thing to buy a kid is really not toys, it is a roll of tape...cause I seem to find it all over from one of my children. I just wish it was not packing tape which seems to be harder to remove.

-Dixie cups can be used as a toilet if one is not available......GRRRRRR!!

Yesterdays Lunch




I was quite proud of my yummy lunch yesterday. I felt like I was getting away with something. I had english muffin pizza which consisted of one 98% ff English Muffin with 1 tablespoon per side seasoned tomato sauce, 1/8 cup per side ff mozzarella cheese, 4 pieces per side turkey pepperoni. I also had enough grapes to equal 1 point (calculations thanks to my cool weight watchers scale). Last but not least a root beer float made with 1/2 the fat Edy's French Vanilla 1/2 cup and diet root beer. In all, it was only 6 points for my entire lunch.

Quick and Easy Goulash..made WW friendly

I got this recipe off of recipezaar, but basically changed it all up to fit my diet. Man, it was good.

Quick and Easy Goulash

1 Kraft Deluxe 1/2 the fat 2% milk box of Mac and Cheese
1 medium onion chopped
1 lb lean ground beef (I used 96% ff)
1 tsp Italian Seasoning
1 tsp Garlic powder
1/8 tsp Red pepper flakes
1/2 tsp Kosher salt
1 can tomato sauce (15 oz)

Start cooking the macaroni according to package. In the meantime, brown the ground beef with the onion, italian seasoning, garlic powder, pepper flakes and salt. Drain. Once the macaroni is done rinse and drain. Add the macaroni to the hamburger, add the cheese packet and the can of tomato sauce and stir. Heat through. It made 6 one cup servings.

6 Weight Watcher points.

My daughter said it was like Hamburger Helper...obviously a healthier version and 1 cup was filling. Could have it with a side salad.

I may just go have a diet Vernors and low fat ice cream Boston cooler now....only 2 points!

4 Jello Pudding (fridge type) after coupons $5.80 or 1.45 pack (used 4 $0.55 coupons) NORMAL PRICE: $2.64 a piece

I did get another $5.00 off my bill as Kroger had a deal that if you bought 25 dollars in P&G items you got $5.00 off...that happened with the diapers, shampoo, and pads.

Total came to $26.42 with tax.

2 Special K Bars after coupons $4.00 or $2.00 a piece (used $1 off 2 coupon) NORMAL PRICE: $3.09

6 boxes of Kleenex after coupons $5.50 or $0.92 a piece (used two $0.50 coupons which doubled to $1.00...hence $2.00 off) NORMAL PRICE: $1.99 a piece

3 Electrasol Gelpacs after coupons $1.50 or $0.50 a piece (used three $2.50 coupons) NORMAL PRICE: $4.49

3 boxes of Kelloggs Cereal, after coupons $3.00 or $1.00 a piece (used three $1.00 coupons) NORMAL PRICE: $3.14 a piece

3 jars Smuckers Jam, after coupons $1.65 or $.55 a piece (used three $0.35 coupons that doubled to $0.75..hence $2.25 off) NORMAL PRICE: $2.75 a piece.

Came to $16.59 with tax

TOTAL SPENT ON ALL MY STUFF: $43.01

If I had bought all of it at full price it would have been.......DRUUUUMMMMMMMROOLLLLLLLLL........$101.62..not including tax

I SAVED $58.61

Thank God for coupons.

It pays to do your homework...I LOVE MY NEW JOB (now that I lost my old one)..this one makes me feel smart.

Apple N' Oats Pudding

Got up this morning at 5 to make sure my daughter got some of this....it was DELICIOUS. I got the recipe idea off of Grocery Cart Challenge. Put it into Weight Watchers recipe builder and came out with 3 points based on the things I used...not bad for breakfast. I used Promise light for the butter and I used one medium Spy apple, fat free milk, and no cream on top...it was just fine without.

SERVES 4 -6 (change servings and units)

Ingredients
2 cups nonfat milk
3 tablespoons brown sugar
1 tablespoon reduced fat margarine or light butter
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 medium baking apple (peeled, cored, and diced)
1 cup rolled oat (not quick oats)
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 tablespoon cream (optional)

Directions
1Preheat oven to 350. Lightly coat a 1 quart baking dish with oil spray.

2Combine the milk, sugar, margarine or butter, cinnamon, and salt in a 2 quart saucepan. Cook, stirring constantly, over high heat for 4 minutes to scald the milk.

3Add the apple and the oats. Continue cooking on high for 1 minuted. Remove from heat and stir in the vanilla.

4Pour the mixture into the prepared baking dish. Bake for 15 minutes.

5Remove from the oven, stir thoroughly. Sprinkle the top with nutmeg. Return to the oven and bake for 15 more minutes.

6Serve warm with cream, if desired.

My Favorite Things

Around my birthday in November, I finally indulged on a new slow cooker. I have been extremely unhappy with the one I have as it would burn food and just seemed to not heat evenly. It was a well known brand too...which made me wonder why I was having such problems. Every time I would cook with it, I would crab and moan that I needed a new one....WELL I FOUND THE PERFECT ONE!!!!! For about the same price or cheaper (depending if you find it on sale), you have three slow cooker sizes in one, stores easily away and is extremely great at its cooking. The thing I think that makes the difference is the small hole in the top of the glass lid to let some steam out...sometimes I think it just gets too hot...water would spit out from around the lid on my last slow cooker.

I just love this thing. I have used two of the three sizes, but am looking forward to making some sort of dip with the smallest some day. I would highly recommend this item. I found mine at Kohls on sale for in the 30-40 dollar range...normally some places charge up to 60. Yummmmmm, I can smell my pork and sauerkraut cooking in it now.
